Recipe: Strawberry Coconut Smoothie

Here’s a sweet treat to make the love of your life happy this Valentine’s Day weekend! My husband LOVES smoothies. If I had a fresh smoothie waiting for him when he came home from work every day, he literally would be grinning from ear to ear. My kids love them too!

As usual, smoothies are REALLY hard to mess up and there is a lot of room for adjustment. Have fun with it and enjoy serving it to your family!!

(*Note: This has a higher sugar content than I usually like to have with my smoothies but it’s a nice treat replacement. I wouldn’t recommend eating this everyday, all day! You can drop the sugar grams by choosing plain coconut milk and vanilla (or plain!) greek yogurt)

Strawberry Coconut Smoothie

Ingredients

♦ 1 1/2 cup of Coconut Milk (I use vanilla coconut milk but you can use plain coconut milk for less sugar)

♦ 1 cup of Strawberry Greek Yogurt (I also used vanilla greek yogurt!)

♦ 1 cup of fresh or frozen strawberries

♦ 1-2 tsp ground flaxseed

♦ 1 cup of ice (if needed)

Directions

Empty all ingredients into mixer, blend, pour and serve! Makes 4 cups.

    Love this!! Derek is not a fan of coconut but Karly and I are! I think I am going to make these as a special treat for the kiddos (and myself) on v-day. Thanks for sharing!

    I love this- I love smoothies- but I seriously can’t stand cleaning the blender- any advice? I mean I get it out about once a month -and then put it away because I hate washing the thing.

      I feel the same way!! Mine sits out and I look at it everyday and think to myself I really want a smoothie but I don’t want to go thru the process of the cleaning it. During the summer I do use it pretty much daily but it’s been awhile since summer!!

      Oh..I understand about the cleaning! BELIEVE me!!
      The best thing I’ve found is just to take care of it as soon as I make it while everything is not dried on there!!
