It’s Double Delicious Friday! OK all you pumpkin lovers! Put down your pumpkin rolls, donuts and lattes and try this instead!
♦ 1 (15-ounce) can low-sodium white beans (navy) rinsed and drained
♦ 1/2 cup canned 100% pure pumpkin puree
♦ 1/2 cup part-skim ricotta cheese
♦ 1/4 cup grated Parmesan
♦ 3/4 tsp garlic powder
♦ 1 large egg
♦ 72 wonton wrappers, about 1 1/2 (12-ounce) packages
♦ 1 tablespoon cornstarch
♦ 1 1/2 cups jarred marinara sauce, microwaved 1 min or until warm
1. Fill a large stockpot with water and bring to a boil. Place the beans, pumpkin puree, ricotta, Parmesan and garlic powder into a food processor. Process until smooth.
2. In a small bowl, beat the egg with about 1 tablespoon of water.
3. Set the wonton wrappers on a cutting board. Place 1 tablespoon of the mixture onto a wrapper. Brush the edges of the wonton with the egg wash. Top off with another wonton sheet.
To make a round shape, cut around the base of the pumpkin can. Press the edges of the ravioli together firmly, to seal.
4. Place the ravioli on a baking sheet sprinkled with the cornstarch. When all the ravioli are cut out, carefully place them in the boiling water using a slotted spoon. As soon as they rise, about 4 minutes, they are done. Lift them out with the slotted spoon and divide the ravioli between 6 bowls.
Top each portion with 1/4 cup marinara sauce and serve immediately. (Doesn’t it look like an egg? LOL!)

♦ Additional Comments: You may want to add a bit more pumpkin puree to the mixture. I couldn’t taste it as strong as I thought I would. Also, I was able to get 2 raviolis out of one wonton square. I used a can to cut around them, however one of these would have been MUCH better! They are very sticky when you get them out of the boiling water. I’m not sure if that’s “user error” or how it really is. Jessica Seinfeld did not provide an “after” shot for me to compare!

I agree with Sue… interesting! I like that you don’t have to deep fry them.
I’ve never even heard of this. And… what?! You can buy wanton dough? No way! I didn’t know that.
I think I will use a Tall Orange juice glass that I have….I wanna try these tonight! But I def think the cookie cutters are the way to go! I am not telling my hubby what’s in these until after consumed! lol!
