Recipe: Strawberry Coconut Breakfast Quinoa

I put this up on instagram and Facebook yesterday and it went over well,  so I thought I’d put it here in case you don’t follow me there or want to pin it! It was my post-workout/breakfast meal! A tip: Make a big batch of plain quinoa at the beginning of the week and keep in the fridge!

 

Strawberry Coconut Breakfast Quinoa

♦ 1/2 cup quinoa, rinsed and drained

♦ 1/3 cup milk of choice (almond, coconut, cow)

♦ 3/4 cup water

♦ 1 teaspoon vanilla

♦ dash of salt

♦ unsweetened coconut flakes

♦ sliced almonds (toasted, optional)

♦ strawberries, banans (or fruits of choice!)

Place quinoa, milk, water, vanilla and salt in saucepan. Bring to a boil, then cover and simmer for 15 minutes. Put into a bowl and top with coconut, almonds, and fruit!

    I enjoyed this. I added a little xylitol (made from birch) to add a little more sweet taste since I used unsweetened coconut milk.
