It’s time for a recipe! I would consider this a healthy dinner option for our family. (You can read my views on healthy eating here)

My friend, Stacey, posted a picture of this on facebook a few months ago and I knew immediately I wanted to make it!! I love incorporating black beans and tomatoes into our diet and what better way to do it than with a pizza!! I also love making my own pizza dough.

Here’s a secret about this recipe–there’s nothing really EXACT about it! That is freeing for some of you and scary for others!! I really don’t think you can go wrong with it!! If you make it, let me know what you think!!

TO MAKE THE CRUST:

Makes 2: (taken from The Pioneer Woman here)

♦ 1 teaspoon Active Dry Or Instant Yeast

♦ 4 cups All-purpose Flour (Or half whole wheat, half all-purpose)

♦ 1 teaspoon Kosher Salt

♦ ⅓ cups Extra Virgin Olive Oil

Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water. In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and store in the fridge until you need it. ***It’s best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.

TO MAKE THE PIZZA:

♦ Olive Oil

♦ 2-3 chicken breasts

♦ Taco Seasoning (to your liking)

♦ 2 cups Shredded Cheddar Cheese (or whatever you like)

♦ Can of diced tomatoes, drained

♦ Can of corn, drained

♦ Can of black beans, drained

♦ Shredded lettuce or cilantro

Cut the chicken breasts into strips and cook them in a little olive oil with the taco seasoning in a skillet.

Preheat the oven to 450 degrees. Drizzle olive oil on a large baking sheet and use fingers to coat thoroughly. Remove HALF the pizza dough from the bowl. Stretch pizza dough into a large rectangle, pressing with fingers to finish forming. Dough will be very thin. Lightly drizzle a little olive oil on the dough and use fingers to spread. Top the pizza with a layer of cheddar cheese, the can of diced tomatoes, corn and black beans (in even amounts, to your taste) and then the seasoned chicken.

Top with more shredded cheddar cheese!

Put in a 450 degree oven (you may use 500 degrees. I played around with this) and bake for 10-12 minutes until the cheese is melted and crust golden! Top with shredded lettuce or cilantro. Add some fresh fruit or a homemade smoothie and you’ve got dinner!
