It’s Double Delicious Friday! Our family loves eating breakfast for dinner. I love the cute idea of the folded tortilla too! Head’s up! You need a cauliflower puree for this one!
Bacon & Egg Cups
Ingredients
♦ Nonstick cooking spray
♦ 4 fajita-size (6-inch) whole-wheat tortillas
♦ 1 large egg
♦ 3 large egg whites
♦ 1/2 cup cauliflower puree
♦ 2 slices nitrate-free turkey bacon, chopped
♦ 4 tablespoons shredded reduced-fat cheddar cheese
♦ Handful of chopped tomatoes & scallions
Directions
1. Preheat the oven to 350 F. In a 6-cup muffin tin, coat 4 of the cups with cooking spray. Hold up a tortilla & make 2 pleats, folding the tortilla into a cup. Press it down on the counter, so that you make the bottom flat and then fit it into one of the sprayed muffin cups. Repeat with the remaining tortillas.
2. In a small bowl, whisk the egg, egg whites and cauliflower puree until smooth. Distribute the egg mixture among the four tortillas. Sprinkle with the bacon & cheddar cheese. Bake, uncovered, until the egg is the cooked through and the cheese is melted and lightly browned, about 15 to 20 minutes. Serve topped with chopped tomatoes & scallions. Yield: Serves 4
