We are in apple season! Who doesn’t love a refreshing sliced apple dipped in caramel, peanut butter, or nutella? I have a new dip for you!
I have to say. This is my favorite recipe, so far, that I’ve made for Double Delicious Friday!! Make sure you portion it out! It would be so easy to fly through this and while it’s double delicious–it still has calories!!!
You will need a cauliflower and yellow squash puree for this.
Maple Peanut Butter Fondue
Ingredients
♦ 1 cup pure maple syrup
♦ 1 cup natural peanut butter (creamy)
♦ 1 teaspoon pure vanilla extract
♦ 1/2 cup cauliflower puree
♦ 1/2 cup yellow squash puree
♦ 6 cups of fruit, cut into 1-inch slices, such as apples, bananas, pineapple, mango, strawberries, or grapes.
Directions:
1. Combine the maple syrup and peanut butter in a heavy-bottomed saucepan. Cook over medium heat, whisking until smooth. Add the vanilla and the cauliflower and squash purees, then stir to combine.
2. Serve with sliced fruit.
Note: For the creamiest results, use a peanut butter that doesn’t separate and require stirring.
